This bistro is committed to buying locally. Every table d’hôte course is prepared with regional products that are grown or made according to environmentally friendly or economically sustainable practices. The veal cheeseburger is made with organic meat and organic Le Grand 2 cheese from Fromagerie des Grondines. The Foccacia de l'Angélus is made with Bleu d' Élisabeth cheese from Warwik. Only organic maple syrup and pure non-iodized sea salt are used in our kitchen; the same type of salt is found in our salt shakers in the dining room. The cheese, meat and vegetables in our dishes come from farms and agri-food producers in Portneuf. We only serve fair trade sugar and coffee. In addition to standard beer selections, we serve the products of Québec microbreweries, including Les Brasseurs R.J., Brasserie Mc. Auslan, Boréal and Québec City’s own La Barberie.
